Chunky Guacamole
Who doesn’t love a good spread like Guacamole to satisfy their cravings? As a kid, I was never a fan of avocados, as the taste and consistency did not align with my taste buds, but over the years, it has grown on me strongly. Now I eat an avocado a day! Lately, I have been consuming guac as if it were a lifeline. What I love about this particular guacamole recipe is the consistency it adds to plates and appetizers. The chunks, paired with sweet onion and juicy tomatoes, create the perfect consistency that my childhood self would love if they had experienced it. On top of this, the chunky version allows every ingredient to stand out rather than get overpowered by a smooth consistency.
To bring this thing together, all you need are ripe but firm avocados, juicy Roma tomatoes, red onion for a sweet bite and pop of color, cilantro, love it or hate it, lime juice, and salt & pepper. When preparing, I find it best to use a fork rather than a knife because it adds an unevenness to the guac that gives it that standout consistency. I love serving this with either tortilla chips or in a taco or burger topping. But you can’t forget trying it on toast, I mean, come on!
Ingredients:
3 ripe avocados
1 large Roma tomato, diced, seeds removed for less moisture
1/2 cup red onion, finely chopped
1/4 cup fresh cilantro
2 tbsp fresh lime juice and zest
1/2 tsp salt, or to taste
freshly ground black pepper
Instructions:
Cut the avocados in half, remove pits, and scoop the insides into a mixing bowl. Use a fork to roughly chop and mash - you want it to be chunky and not smooth.
Add the chopped veggies and cilantro and mix thoroughly.
Add your lime juice, zest, and seasoning, and stir again until well combined. Taste and adjust seasoning if desired.
Let the Guac sit for about 10-15 minutes at room temperature to allow the flavors to marinate together.
Serve with tortilla chips or as a taco or burger topping and enjoy!
