Ginger Dill Salmon
With every summer comes a plethora of fresh produce that can be eaten by itself, or it can be elevated by pairing it together strategically. This summer has been incredibly humid and tough to get through, so I needed a cool, refreshing dish that also satiates me for more than two hours. My Ginger Dill Salmon recipe does just that!
There is something about citrus and ginger and dill that just complements each other so elegantly. The citrus salad, composed of grapefruit, orange, and kiwi, all pair perfectly with the salmon, adding a hit of flavor and a cool, refreshing taste. I feel that the ginger and dill bring this entire recipe together, acting almost like a dry rub on the salmon. The addition of Avocado is also an important component because it gives the recipe a rich, creamy texture.
This recipe is easy, delicious, nutritious, and is sure to be a favorite during these summer months!
Ingredients:
1 lb salmon filet
¼ cup dill
2 tbsp fresh ginger, grated
2 tbsp olive oil
½ lemon juiced
1 orange, sliced
1 grapefruit, sliced
1 kiwi, sliced
½ avocado, quartered
Salt & pepper
Instructions:
Preheat your oven to 400 F and add your dill, ginger, olive oil, salt, and pepper to a bowl and mix until well combined.
Add your salmon to a baking sheet, season with salt and pepper, and brush the mix onto the salmon and bake for 15 minutes.
In the meantime, combine your orange, grapefruit, and kiwi slices into the bowl with the ginger dill residue and give it a nice stir.
Once the salmon has finished cooking, plate with the citrus salad and avocado slices and enjoy!
