Greek Chicken Souvlaki

When it comes to Chicken Souvlaki, you can’t go wrong. Whether it’s the tender, satisfying chicken pieces or the lemony, garlicy marinade, this dish delivers in all aspects. What I love about chicken souvlaki is its simplicity. In its entirety, it only takes about 30 minutes (excluding the time it takes for the marinade to sit). So, what is Chicken Souvlaki? Typically, it is a Greek dish that combines a lemon garlic flavor with classic Mediterranean spices like oregano, parsley, etc. In most cases, this will be cooked with skewers on the grill to let the flavors of the dish come through. Most often, I will serve this with classic Mediterranean staples like warm pita bread, tzatziki, or a simple Greek salad.

Everything begins with the marinade, which is composed of olive oil, lemon juice and zest, freshly minced garlic, oregano, parsley, and salt & pepper. Once the chicken is thoroughly marinated, they will be threaded onto skewers (I find metal to be easier). Once threaded, the skewers will be grilled for 4-5 minutes on each side to give them a good char with a juicy exterior. After that, it’s all up to you! This is an easy staple for me in the summer as it is perfect for meal prep and doesn't need to be warmed up to taste good. I hope you give this one a try!

Ingredients:

  • 3-4 boneless, skinless chicken breasts, cut into 1-inch cubes

  • 2 tbsp lemon juice

  • 3-4 garlic cloves, finely minced

  • 2 tsp dried oregano

  • 1 tsp dried parsley

  • salt & pepper

  • Optional sides: Fresh tzatziki sauce, warm pita bread, or a cucumber tomato salad

Instructions:

  1. Add your chicken, lemon juice, olive oil, garlic, dried herbs, and salt & pepper to a mixing bowl and stir together. Place in the fridge to marinate for at least 30 minutes - the longer the better.

  2. Preheat your grill to medium-high heat. Thread your chicken pieces onto your skewers (about 6-7 pieces to give enough room for each).

  3. Cook the skewers on the grill for 4-5 minutes on each side.

  4. Serve the chicken with your desired sides and enjoy!
