Lemon Garlic Baked Cod

What makes Cod so fun to experiment with is its natural ability to absorb the flavor of different marinades. Here, I experimented with a lemon garlic sauce, and it tasted amazing! Fish, being one of the staples of the Mediterranean diet, paired with the right spices, naturally feels fresh and light. So what makes this recipe work? Cod is a beautiful white fish that is quick to cook, flaky, and has a more subtle flavor than its fish counterparts. This, paired with a light medley of Mediterranean spices, means you get a lemony, earthy, and delicious cod that is very versatile with what you serve it with. The tender, flaky cod falls apart in your mouth and gives the illusion that you barely have to chew it. What temperature should you bake cod at? Typically, Cod is cooked at 400°F, although if you want a more crispy, roasted cod, 425°F never hurts. I like to serve this with roasted vegetables such as roasted asparagus, roasted broccoli, or roasted brussels sprouts, as well as grains that will absorb the flavor of the sauce, like rice or quinoa. Ingredients:

  • 3-4 pieces of cod filets

  • 3-4 garlic cloves, finely minced

  • 2 tbsp fresh lemon juice

  • 1 tbsp melted butter

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp oregano

  • 1/2 tsp dried parsley

  • Salt & pepper

  • lemon slices (1 per cod filet)

Instructions:

  1. Preheat your oven to 400°F. In a mixing bowl, combine your lemon juice, butter, garlic, olive oil, and spices and toss well.

  2. Place your cod filets in a prepared baking dish in a single layer. Pour the marinade onto the cod and let it sit in the fridge for at least 30 minutes.

  3. Bake the cod for 15-20 minutes or until the fish flakes easily with a fork.

  4. Serve with roasted vegetables and a grain of your choosing and enjoy!
